Wow! it's April already.

We had a great response to last month's "Free Chocolate Easter Bonus" and some great feedback. I would like to thank everyone who participated; it's a fantastic product and one that I am personally very fond of.

We have a great recipe for you this month and a couple of interesting offers for you to consider. I talk about the importance of enzymes in our diet and how to increase them naturally.

I couldn't send this newsletter out without telling you about an event that completely blew me away. It's easy to guess which heading that comes under.

My Life Changing Event.

There are many events in our lives that are so important they change the course of our lives - first day at school, first job, marriage, birth of our children, death of our parents, becoming a grand parent.

On the thirteenth of this month I became a grandparent for the second time and although it is number two grandchild, this birth will stand out as one of the most amazing events in my life.

Why should it be any different to the first you might ask?

This time I got to be there, supporting my daughter and her husband, for the entire fourteen hours it took for this miracle to unfold. My daughter chose to have a natural, drug free, water birth at home. What a fabulous experience and a great honour it was to be there. Miraculous enzymes: - vital for our immune system, digestion and metabolism.

First, it is important to understand what enzymes are and how our bodies use them to aid in digestion and in our overall health.

Enzymes are of vital importance in our ability to digest foods, as well as increase our absorption of the nutrients that are contained in our foods. They are essential in the regeneration of cells and tissues; protecting our bodies from free radicals and other toxic substances; they are of vital importance to our immune system as well as our metabolism.

When we are young, our bodies produce them in abundance. However over years of eating foods that force our bodies to use the majority of our enzymes in the digestive process alone, leaving little left to aid in the regeneration process of our cells, the more we speed up the aging process and the more we damage our body's ability to function efficiently and to protect us from disease.

The most Enzyme Rich Food on the Planet - the simple solution.

Sprouted grains are among the most powerful of all enzyme rich foods.

Sprouting...the explosion of life begins. The sprouting process releases enzyme inhibitors, allowing the incredible production of enzymes to begin. The enzyme activity taking place in the grain basically turns the grain into a pre-digested state, significantly aiding in the ease of digestion. It turns fats and carbohydrates into simple sugars; proteins into free amino acids and peptones; some vitamins increase by as much as 500% during the sprouting process.

The sprouted grains are even lower in calories and carbohydrates than the grains from which they came. By feeding our bodies foods that are rich in enzymes, it allows our bodies to use its own source of enzymes for things other than just to aid in our ability to digest foods. I have even read where sprouted and enzyme rich foods are often referred to as "the fountain of youth." Now I am no expert, but logically it makes sense when you take into consideration the important role enzymes play in the regeneration process of our cells.

What happens to enzymes when heat is applied?

The best example I can give you in regards to how heat affects enzymes, is one I read in the book titled ‘North American Diet', by authors Ron Lagerquist & Tom McGregor.

Here they refer to fruit and how, over time, the fruit will become over-ripe and turn to mush. The ripening process is due to the living enzymes breaking down and digesting the fruit.

In contrast, pasteurised fruit juice can remain fresh for a year, because the enzymes have been destroyed by the application of heat.

I have read many different theories as to what temperatures are reached, when the enzymes start to die...ranging all the way from 105 degrees to being completely destroyed at 130 degrees. There is no doubt in my mind that, in order for sprouted products to maintain and have the highest nutritional value, it is of utmost importance when applying heat, that normal cooking temperatures are reduced and very closely monitored. I cannot stress this fact enough.

To completely avoid the heat factor, we eat all our sprouts raw and on every thing we eat and we grow them ourselves in our own kitchen in a great little contraption called a Health Start Auto Sprouter.

Recipe of the Month

Di has excelled herself this month and has provided us with the recipe for a breakfast dish that I just love every time she prepares it.

French Toast - vegan style.

The original recipe for this was made with eggs. To keep it Vegan I have used besan flour in place of eggs and the result is fantastic.
So now you can enjoy a yummy vegan breakfast on a Sunday morning.
This dish only takes a few minutes to make.

Enjoy! Di Skelly Heron

Ingredients

1 cup besan flour
2½ cups water
A pinch celtic salt
1 tsp sage leaves
½ lemon, squeezed
Rice Bran Oil for cooking pancakes
2 tbsp Olive Oil for dressing
2 tomatoes diced
Fresh Basil leaves
2 spring onions, finely sliced
Spelt, Kamut or selected slices of bread

Whisk the flour, water, salt, oil, sage, spring onions and lemon juice in a bowl and then soak bread slices in the mixture for 3 minutes.

Heat a non- stick frypan (Diamond Titanium) on high. Add a little Rice Bran Oil and lightly sauté the tomatoes. Set aside and keep warm.

Put more Rice Bran Oil in the pan and add two slices of the soaked bread, then pour a little more mixture over the top. When the edges start to crisp up and bubbles appear on the besan mixture, flip over and cook for a further 2 minutes. Put onto a serving plate, top with cooked tomatoes and fresh basil leaves. Drizzle with a little Olive Oil. Yum!!
